Vegans welcome!

This weekend, we were full on Saturday night and had Becka, Tim and Florence to stay and Felicity & Paul camped in the garden.

We had our first vegan to stay this weekend – fortunately, they told me in advance and suggested a pancake recipe recipe for breakfast.  I made vegan flapjacks – which I think were quite nice – 4 tbsp Vegetable Oil, 6 tbsp Golden Syrup, 2 tbsp Muscovado Sugar,  150 g Oats, 50 g Sunflower Seeds, 25 g Sesame Seeds, 25 g Desiccated Coconut, 50 g Dried Apricot Pieces, chopped – and basically all mixed together and put in the oven(180c) for 20 minutes.

I didn’t even realise that vegans don’t eat honey.  The vegan pancakes were really nice, and much easier than the buttermilk ones we usually make.

We probably need to perfect a few more vegan recipes to add to our repertoire for next time.

    Sounds lovely. You can also swap honey for agave.. Lower GI as well I’m told, and it has a bit more taste in my opinion.
